Wholegrain Bialys with Matbucha Sauce and Manchego cheese

For the bialys I used this recipe:

Prepare the Matbucha Sauce Ingredients:

• 15 ounce can diced and crushed tomatoes (I used Tuttorosso brand)

• 14.5 ounce can stewed tomatoes

• 1/4 tsp. Crushed red pepper

• ½ tsp. garlic salt

• ½ tsp. Smoked paprika

• 2 tsp. Olive oil

In medium sized microwave safe baking dish (such as corning ware) combine the above ingredients. Microwave on high for 5 to 8 minutes. Cool and refrigerate while you prepare the bialys. This will be the filling along with the Manchego cheese.

Prepare the dough for the wholegrain bialys.

When you have shaped the dough for individual bialys on baking sheets, make an indentation in the middle of each one (as described in recipe). Instead of using the onion filling, put a Tbsp. of matchuba sauce in the center of each bialy and top with a Tbsp. of manchego cheese.

Bake in 475 degree F. oven as directed.
