This week we’re having a rare cold spell, due to a Polar Vortex!
I felt the need for a comforting soup so I came up with a variation of the classic split pea soup. My Polar Vortex Pea Soup combines traditional ingredients for a split pea soup (minus the ham) and adds a puree of green peas for fresher flavor.
I freeze the soup in individual serving containers. When I’m ready to use it, I let it thaw and mix in one or two teaspoons of cornstarch or tapioca starch. Then I reheat it in the microwave oven.
The addition of a starch gives the soup a very nice creamy texture.
