Smoky Lentil-Barley-Mushroom Soup

Here’s a satisfying soup for late winter dinners.

It uses smoked turkey bones to flavor the broth.  Otherwise there is no actual meat in it.  The flavor is complex, and there’s some heat from the ginger and chilies.
