DSCN3461I’ve been experimenting with this recipe for Peruvian Potato Salad for several years.   This is my favorite version, using meunster cheese and half and half cream in the sauce.  The ingredients include cooked Yukon Gold potatoes, a cheese sauce and garnishes of hard boiled egg, black olives, chopped peanuts and pickled onion.

This is a nice vegetarian entree or buffet side dish.
